Cuisine is the latest addition to Bangkok’s ever-evolving dining scene. A casual French-inspired restaurant that turns traditional dining upside down, Cuisine BKK welcomes guests into a kitchen hidden on the third floor of No. 3 Sala Daeng Road in Silom. It may not yet appear on the city’s top-ten restaurant lists, but it is undoubtedly a discovery worth sharing.
A Dining Room Inside the Kitchen

The entire restaurant is built around the different stations of an open kitchen, where stainless-steel counters, raw concrete, and glowing embers create a stage for interaction between chefs and guests. Diners sit at communal tables right in front of the action while stylish servers move cocktails, wine, and small plates through the room. The atmosphere is lively and social, perfectly reflecting Bangkok’s sophisticated yet relaxed energy.
French Roots, Seafood Accents, and Sharing Plates
Cuisine BKK takes its inspiration from French bistronomy while remaining free from strict culinary boundaries. The menu is divided into cold dishes, hot dishes, and pastries, with a strong focus on seafood and open-fire cooking. Charred aromas, tapas-style creations, and sharing plates define the experience. The menu changes according to seasonal ingredients, and some of our favorites included tuna akami with green shiso and tonnato sauce, Oyster “Kys” with marigold vinegar and finger lime, flatbread “Pissaladière” topped with Cantabrian anchovies and olives, slow-cooked bucatini with razor clams and bone marrow, and grilled flattened sea bream. For dessert, the pastry station offers playful creations such as a madeleine “à la minute” served with toasted-vanilla soft serve and the Chou “Snickers,” layered with peanut cream, caramel, and chocolate.
The People Behind the Stove

Cuisine BKK is led by a quartet of hospitality veterans. Franck Le Bayon, formerly of the experimental French restaurant IODE, serves as Culinary Director and co-founder, while Morgan Daniel oversees operations as General Director. Marco Angeles, previously part of Ojo's team, leads the kitchen as Executive Chef, and Marie Barbarroux heads the bar program. Their combined experience in fine dining, wine bars, and open-fire cooking has shaped Cuisine’s unique blend of French technique and Bangkok-inspired energy.

Why We Recommend It

Cuisine BKK is more than just a good restaurant—it is a genuinely exciting dining destination. Its open-kitchen concept transforms dinner into an engaging and entertaining experience, while the menu successfully balances indulgent French flavors with seafood-driven dishes and smoky open-fire cooking. Whether you are looking for a casual dinner with friends, a lively date night, or a late-night drink and bite after work, Cuisine BKK delivers an experience that is as much about atmosphere as it is about flavor. It may not yet be one of Bangkok’s most talked-about restaurants, but this hidden Saladaeng gem is already earning a loyal following among discerning locals and visiting food lovers alike.
